Per serving (as main meal):
½ -1 apple, sliced
200g crumbled Feta or goats cheese
2 thick slices of sour dough, soda or granary bread
Tomato pesto to spread on toast
Extra virgin olive oil
1. Slice the apple and crumble the cheese.
2. Toast the bread, spread each piece with tomato pesto then cut into triangles.
3. Add the cheese, and arrange apple slices on top.
4. Drizzle with a little extra virgin olive oil.
